Terry’s Chocolate Orange Cookies
Mmmm chocolate and orange COOKIES! I think I’ve professed my love for this flavour combo before but I really can’t say it enough – SO delicious! I was clearing out some old photos recently and came across a few of me when I was very very young … and I just happened to be devouring A LOT of Jaffa Cakes, to the point my face was covered in chocolate! I bet I was loving life 😉 So my love of all things chocolately and orangey clearly started at a young age!! ❤️
Following my super ooey gooey Easter cookies, I thought why not adapt my recipe and add chocolate … Lots of chocolate!! The recipe is technically part baked which is what makes them gooey in the centre and crispy on the outside – but I love cookies like this ❤️ Slightly chewy, definitely gooey and perfectly indulgent!
Mini segments of Terry’s chocolate orange in the cookies, on top of the cookies – I can’t think of anything better 🙂 I promise you that these will be very popular with friends and family, and I know this because mine couldn’t get enough of them!! Everytime I see my dad at the moment his first words to me are MORE COOKIES PLEASE! 🙂
I hope you enjoy baking and eating them as much as I did!
115g soft brown sugar
115g caster sugar
150g unsalted butter
1 medium egg
1 tsp baking powder
175g self raising flour
50g cocoa powder
125g mini Terry’s chocolate orange segments ( or normal sized segments chopped in half)
Zest of 1 orange
Preheat the oven to 180C and line two baking sheets.
1 – Cream the butter and both sugars together until light and fluffy. Add the egg, baking powder, cocoa and orange zest. Mix until combined.
2 – Fold in the flour until a sticky dough forms. Fold in the chocolate orange segments until evenly distributed throughout the mix.
3 – Roll sections of the cookie dough into balls, depending on what size you like your cookies to be this will vary! Just be sure that each cookie dough ball has some chocolate orange in it!
4 – Place the balls onto the baking sheet, leave enough space between them as they will spread whilst baking. Bake for 8 minutes for a gooey centre or 5 minutes longer for a fully crisp cookie!
5 – As soon as they come out of the oven place a chocolate orange segment on top. Leave to cool on the baking sheet, they’ll be easier to transfer after cooling for about 5 minutes. Now you can enjoy them still warm or try and resist until cooled!
Happy Baking <3
