Brownies, brownies, brownies – they should definitely make up a food group all of their own! I think I’ve already expressed my love of the brownie and this is the recipe I’ve used time and time again and it never disappoints. Coupled with my current obsession with caramel I thought why not sandwich some ooey gooey super sweet caramel is the centre of these indulgently chocolately brownies!! <3
It worked out pretty well – my only advice is leave them to cool before eating them ALL! I tried to eat them still warm (straight out the oven more like!) and who knew the caramel oozing from the brownies was going to be SOO hot, but it is, so please be careful! 🙂
With the caramel warning done let’s get back to these delicious brownies! They really are a chocoholics dream – fudgey, soft, moist and of course filled with a caramel centre… picture it now, your very own slice (wedge) of caramel brownie with a nice cup of tea = perfection!
I’ve made these quite big but you can use 2 traybake tins and make them thinner – just reduce the cooking time 🙂
275g plain chocolate
275g unsalted butter
325g caster sugar
125g plain flour
50g cocoa powder
1tsp baking powder
4 medium eggs
1tsp vanilla extract
1 can caramel ( I used Carnation caramel)
Preheat the oven to 170C.
1 – Melt the chocolate and butter together ans set aside.
2 – Whisk the eggs, sugar and vanilla until combined.
3 – Pour the mix into the chocolate mixture and stir well.
4 – Sieve in the flour and cocoa powder and baking powder. Mix well until fully combined.
5 – Pour half the mix into a lined and greased traybake tin then spoon the caramel over the brownie mix. Leave at least a 1cm rim around the outside.
Pour over the remaining brownie mix being careful not to push the caramel through. Try to get the caramel completely encased by the brownie mix.
6 – Bake for 45 to 50 minutes depending on whether you’ve split the mix up. When checking if it’s done – when a skewer is inserted it comes out clean and when shook the middle doesn’t wobble.
7 – Allow to cool before cutting, eating and enjoying! Yum
