Hello bakers! I hope everyone had a lovely bank holiday weekend – if you’re looking for a sweet pick me up to soften the return to work then look no further than these scrummy Vanilla Butter Biscuits! Soft and sweet with a definite melt in your mouth moment they are sure to brighten up your morning, afternoon, evening … anytime of the day really!! 😉
These biscuits follow a basic recipe so if you can always add another flavour in or a little something else – chocolate perhaps! However I decided to keep them simple and flavour them with luscious vanilla as they’ll go super well with my serving suggestion – something awesome, coming later this week!!
250g unsalted butter
140g castor sugar plus a little extra
300g plain flour
1/2 tsp baking powder
1tsp vanilla extract
25g Demerara sugar (for topping)
Preheat the oven to 170C and line 2 baking sheets with baking paper.
1 – Cream the butter and sugar until creamy and fluffy. Add in the egg and vanilla, mix well.
2 – Add in the flour and baking powder, mix until a dough forms. Wrap in clingfilm and chill for 30 mins.
3 – Roll out the dough on a floured surface, roll out quite thick, about 1cm thickness. I used plain 6cm diameter round cutters, but you can choose any size! This recipe will make around 18 biscuits at this size.
4 – Place onto the baking sheet, 6 to a sheet as they will spread and rise a little. Sprinkle over the sugar, you can brush them with a little milk if you like as well, before the sugar sprinkle. Bake for 12-15 minutes or until golden brown.
