Chocolate Bourbon Biscuit and Baileys Microwave Fudge!

My favourite time of year is nearly here, I love spending time with family and friends, doing lots of Christmassy activities!
This recipe for a super speedy microwave fudge is based on the Good Food recipe from their latest issue – I’m somewhat hopeless when making fudge so this was my miracle cure and it worked a treat! I made a few additions to the original as my family are fans of Baileys so it was a must! There’s no need for a sugar thermometer and the microwave does all the work, just keep an eye on it as it might bubble over and make a sticky mess aha.
Fudge is a great gift at Christmas time as well, homemade and super delicious everyone will want some in their Christmas stocking! You can flavour the fudge with what you’d prefer, other flavours might be chocolate and orange, Oreo crumb, Nutella, the possibilities are endless!
400g golden caster sugar
397g condensed milk
140g salted butter
8 chocolate Bourbon biscuits
3tbsp chocolate baileys ( or the original!)
Grease and line a square baking tin.
1 – Place the sugar, milk and butter in a large microwave safe bowl and heat on high in the microwave for 10 minutes. Keep and eye on it and stir every 2 minutes.
2 – Add the Baileys and stir well. Heat on high for another 2 minutes.
3 – Gently crush the biscuits so they’re in bite size chunks. Carefully fold the biscuits through the fudge. Pour into prepared tin, level off and leave to cool and set for 1 hour at room temperature.
