Orange & Poppy Seed Loaf Cake – a soft, light and zesty loaf cake – YUM!
When I was thinking of what to bake this week I knew I wanted something fresh and zesty … and I knew I wanted cake! I do love cake, and a loaf cake is perfect for an easy bake when all you want is a sweet pick me up to get you through the rest of the day/week/month!
The recipe for this scrummy cake is similar to a lemon drizzle cake, only I’ve swapped the lemon for orange and added some poppy seeds for a bit of texture in the cake. The addition of orange syrup whilst the cake is still warm from the oven really enhances the delicious orange flavour and makes the cake extra soft and moist – what more could you want from a cake?!
I hadn’t made a loaf cake for a long time before this yummy bake, I definitely need to give them a go more often – a simple yet scrumptious cake that you can whip up and bake in the time it takes you to catch up on the latest episode of your fave TV show… I’ll be watching Greys Anatomy <3

225g unsalted butter
225g caster sugar
3 large eggs
225g self raising flour
zest of 1 large orange
3tbsp fresh orange juice
2tbsp poppy seeds
For the syrup –
50g caster sugar
4tbsp fresh orange juice
Preheat the oven to 180C and grease and line a 2lb loaf tin.
1 – Cream the butter and sugar together until fluffy and pale. Add in the eggs, orange juice, orange zest, poppy seeds and 3tbsp of the flour – mix well until combined and no lumps are visible.
2 – Fold in the remaining flour and spoon into the loaf tin. Bake for 40 – 50 minutes or until when a skewer is inserted and comes out clean. If the top is darkening too quickly, cover with foil and continue to bake.
3 – Just before the cake is ready mix the juice and sugar together and heat in the microwave for 1 minute. As soon as the cake is ready, leave it in the tin, poke a few holes on top and spoon over the orange syrup. Leave to cool in the tin and then turn out – enjoy!
