Mini Pizzas!

Mini Pizzas – a deep pizza base with a delicious tomato, cheese and chicken topping <3

Hello bakers! I’m not sure I’ve expressed my absolute love of pizza before, but whenever anyone asks me ‘What’s your favourite food’ … no hesitation it is always PIZZA! Of course cakes and cookies are in a totally different category of favourite foods and my sweet tooth is still going strong but pizza holds a special place in my heart.

You can put anything on a pizza which makes them super versatile – vegetables, meat, just cheese… lots of cheese … anything!! These pizzas are made with a standard pizza dough and then you can let your pizza cravings go wild with the toppings. You can even switch out the tomato sauce for BBQ sauce if you’d like, I often used store bought BBQ sauce as my homemade ones just never taste right.

I do like a thicker base on my pizza but if you prefer a crispier one just roll out the dough thinner and you’ll have your perfect pizza every time. This recipe is for mini versions of pizza which means they are deliciously cute! I often take Mini Pizzas along to a family get together but they would be perfect picnic food as well. With is being National Picnic Month it’s the perfect excuse to bake up a batch of these mini delights to celebrate!!

If you prefer you can just make one large pizza with the dough, you’ll just need to increase the baking time to around 20 minutes depending on how thick you have your base.

Ingredients 

500g strong white bread flour

7g fast action yeast

7g salt

325ml warm water

Topping –

1 tube of tomato puree

Mixed herbs

200g cheddar cheese

100g cooked chicken (optional)

Recipe

1 – Place the flour in a large bowl, add the yeast to one side and the salt to the other. Gradually add in the water, you may not need it all. You’re looking for the dough to come together but not be so sticky you can’t handle it. Knead the dough for 10 minutes, until when you press your thumb in the dough it starts to spring back. Place back into a lightly oiled bowl and allow to rise for 1 hour.

2 – Separate the dough into 24 balls and roll out into circle. Now you can top with anything you like. I used 1tsp of tomato puree on each pizza, a sprinkle of mixed herbs and topped with grated cheese and/or cooked chicken. Bake for 12- 15 minutes or until golden brown.
