Caramel Eton Mess Cupcakes: a sweet lightly spiced cupcake topped with buttercream, meringue piece and caramel!!

Hello bakers! When you think of an Eton mess what comes to mind? Melt in your mouth meringue with fresh berries and cream maybe? Well I have something new and delicious for you! Caramel Eton Mess … CUPCAKES!

Soft, sweet and mouth-wateringly good meringue pieces. A drizzle of caramel. Smooth creamy buttercream. And a deliciously tempting cupcake. All this deliciousness make up a Caramel Eton Mess Cupcake!!! Super tasty and surprisingly easy to make.

The meringue pieces are made from brown sugar meringues, and you can the recipe in my previous Caramel Mini Pavlova post. If you’re making that recipe I suggest halving the quantities, it’ll make 7 mini pavlovas that way so you can enjoy a few and use a few for this yummy recipe! Or, if you prefer you can buy pre-made meringue nests that you can break up for the topping. Either way, very delicious.

The buttercream is your standard American style buttercream, whipped to be smooth and creamy. I’ve chosen to use Carnations Caramel to drizzle over the cupcakes but you can make your own, recipe is in my Rolo Caramel Blondie post!

The cupcake itself is light, soft and scrumptious!! Like, really good! The recipe uses light muscovado sugar so the extra molasses add a caramel flavour to the sponge mix. Deeeeelicious!! The whole cupcake with all the yummy toppings tastes incredible, and not too sweet. A summer inspired cupcake that wouldn’t look out of place at a picnic or BBQ!

I love these cupcakes, they’re fun and yummy which is exactly what you want from a cupcake! You can spend as much time on the topping as you’d like. For instance, you can either make the toppings from scratch or buy them ready to use. I hope you enjoy them as much as I did and let me know what you think!

Caramel Eton Mess Cupcakes

  • 200 grams Butter I used Stork
  • 200 grams Light Muscovado Sugar
  • 3 medium Eggs
  • 200 grams Self-raising flour
  • 1 tsp Baking powder
  • 1 tsp Vanilla extract

For the Buttercream

  • 150 grams Unsalted butter
  • 300 grams Icing sugar
  • 1 tsp Vanilla extract
  • 1 tbsp Milk


  • 2 Meringue Nests Homemade Brown Sugar meringue or store bought
  • 8 tbsp Caramel I used Carnations Caramel Drizzle


  • Preheat the oven to 180C fan/200C. Line a cupcake baking tin with cupcake cases. The recipe will make 15 – 16 cupcakes so bake them in two batches if you only have one tray.
  • Cream the butter and sugar together until fluffy and paler in colour.
  • Add in the eggs and vanilla and mix until combined.
  • Fold in the flour and baking powder until all the flour is incorporated.
  • Using a medium sized cookie scoop or a spoon fill the cupcake cases no more than 3/4 full. One scoop in each case is enough.
  • Bake for 12 – 15 minutes or until golden brown and springy when gently touched on top.
  • Let the cupcakes completely cool before decorating. You can use this time to make the brown sugar meringues if you're baking them from scratch.
  • To make the buttercream add the softened butter to a stand mixer and whip with the paddle attachment for 10 minutes. You can use an electric hand whisk if you don't have a stand mixer. Add in the icing sugar in two batches. Whip until fully incorporated, no icing sugar lumps wanted.
  • Add in the vanilla and milk and whip for another 5 minutes. The buttercream should be smooth and paler.
  • Fill a piping bag with the buttercream. You can use a tip if you'd like but just snipping the end of the bag off works fine for this recipe.
  • Pipe a small, puddle like shape on top of the cupcake.
  • Break up the meringue nests and insert shards into the buttercream. Crumble some meringue on top as well. Drizzle caramel over the top. Enjoy!
